Thanksgiving is just a couple days away, and I’m already looking forward to that thanksgiving leftovers! The morning after is calling for a thanksgiving leftover frittata waffle crammed with eggs, cheese, my bacon and jalapeno stuffing, and whatever other goodies you can find!
This frittata waffle loaded with my favorite stuffing, is a quick and easy meal to make, especially if you want to do black Friday shopping the next day. I don’t know if I can handle the crazy crowd, but if you’re courageous you’ll definitely need some energy to handle it!
It also refrigerates well so if you want to do a little night before prep and heat them back up in the morning, that works too!
I’d definitely throw in any bits from thanksgiving that resemble breakfast. Stuffing is a for sure, especially if it has potatoes already in it. Maybe a little ham too? Whatever you feel like!
A few tips when cooking up a frittata in your waffle iron. I like to use spray on butter/oil to keep it well lubricated to prevent any sticking. I also found (at least on my iron) that splitting the waffle into fours – after its been cooked – before you take it off the iron, makes it alot easier to remove from the waffle iron.
