I can grub on a breakfast sandwich any day of the week. Today I’m sharing one that is absolutely amazing, using Krusteaz Protein Buttermilk Pancake Mix, eggs and bacon to load up the protein and get ready to take on the day!

This is actually a quite simple to make recipe. Quickly mixing together the Krusteaz Protein Buttermilk Pancake Mix with oil, water and egg, you’ve got a waffle mix. With a little multi-tasking skills, or better yet, getting the family involved, you can have breakfast on the table in 15 minutes!

The best part about this recipe is how much protein is packed in this sandwich. With 13 grams of protein per 1/2 cup of mix coming from Krusteaz Protein Buttermilk Pancake Mix alone, you’re looking to get at least 20g protein per sandwich!

If you’ve got a big appetite like meal you’ll be able to scarf down two of these, and trust me its a little hard not to do. The waffles have a fluffy bite, yet feel solid enough to hold in your hand. and all the cheesy goodness smothering your bacon and egg makes a really great treat for any morning.

Or if you’re a breakfast for dinner type of person, like I am – this is where its at!

Cooking the Egg for the Waffle Sandwich

A big tip here to keep this a low maintenance in the kitchen recipe, is to make folded eggs. Use a large pan or skillet and let the egg slowly cool, and keep from stirring to much, then flip.

You’re basically using the same cooking method as you would with an omelette. Just at a larger scale. This will keep it in tact and you can simply fold it over your waffle sandwich and top with bacon and cheese.

Better yet, bring everything to the table and let the family build their own waffle breakfast sandwich. It’s like a waffle station and omelette bar all in one!
