Huevos Rancheros Tostadas are aa fun way to do breakfast for dinner, but if with some seasoned sweet potatoes on top makes them that much better!

Sweet potatoes isn’t something I’d normally think of on huevoes rancheros but when doesn’t potatoes taste good with eggs?
Plus you get those complex carbs with a sweet potato, so that makes this 100% healthy.. right?!
The sweet potatoes are seasoned with a little cumin, paprikia ,salt and garlic. On top of some black refried beans avocado, cherry tomatoes and a touch of cilantro and queso fresca, all thats left is to add a fried egg to it.
I mean, huevos rancheros tostadas aren’t a new thing on the blog, but I feel this one has a freshness to it that really makes it worth changing up a go-to recipe.

Sweet Potato Huevos Rancheros Tostada

Cook Time: 15 minutes

- 1 large sweet potato peeled and diced.
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 4 to stada shells
- 4 eggs
- 16 oz black refried beans
- 1/4 cup queso fresca
- 1/4 cup cilantro chopped
- 1 cup cherry tomatoes halved
- 1/2 avocado
skillet over medium heat for about 10 minutes until tender and browned ; set aside
While the potatoes are cooking heat up a can of refried black beans in a small pan on medium low.
Fry 4 eggs and place on a plate.
Top black refried beans on tostada, Top with a spoonful of sweet potatoes, cherry tomatoes, avocado, queso fresca and cilantro . Top with fried egg and your favorite salsa and enjoy!
