What makes this amazing, is this can totally be a leftover idea. Yes, you can totally smoke chicken fresh for this recipe, which is a great idea for the weekend.
But if you’re smoking chicken over the weekend, and have extra. Save it for these smoked chicken tacos.
If you’re smoking chicken specifically for this recipe, I recommend using my bbq dry rub and using apple wood. Smoke low and slow at 220-250 F for about 2-3 hours until the internal temp hits 165 F.
