I’ve been seeing Chia everywhere lately, and have been looking more into it and have been super curious what to do with it especially after seeing chia drinks on the grocery store shelves. I’ve found out that making a chia parfait is a great gateway recipe into the world of chia seeds!
If you’re not aware already, chia seeds aren’t just for making awesome haired plant pets. Which side note, I’ve never owned a chia pet, and am a little salty that I never had one as a kid.
Chia seeds when soaked in almond milk for about 20 minutes (even over night) get this amazing tapioca-like texture that is utterly amazing! Mix it in will a little vanilla greek yogurt with honey and you’re on to something.
So chia parfaits normally consist of just a “chia pudding” which is your chia seed soaked in milk. Adding yogurt adds more flavor and a creamy texture to your parfait that I truely enjoy.
But what I really need to talk to you about right now is something I stumbled upon at the grocery store the other day – Baby Kiwis. I never knew these existed but they’re awesome! They’re little bite-sized kiwis that you can cut up, or just pop right in your mouth. They have all the flavor or a full-sized kiwi, and are definitely fun to try!
Parfaits are a simple breakfast or snack idea when you’re on the go, and chia pudding can stay in the fridge for up to 5 days, even with yogurt blended in like this. I made a heaping serving and have lots of fresh fruits ready to go. So this is one of our go to’s right now in the morning when we’re all running around getting ready for the day.
This is also a really good way to get chia seeds into your diet, adding good protein, omega 3 fatty acids and plenty of other great benefits.
