So I came home last night with not a clue what to make for dinner. I didn’t feel like being in the kitchen, and I didn’t feel like spending a lot of time on dinner. So I steamed up some rice, and decided to make a shrimp bowl with grilled broccoli. A little garlic, butter and smokey flavor from the grill really made the broccoli stand on it’s own. I was so happy with how it came out I just had to pull out the camera and share it with you!
This is such a simple and delicious side, not to mention can be done in less than 10 minutes. You don’t want to over cook and make them soggy, they should have a “snap” to them. Nobody likes soggy vegetables, they’re mushy, and you’re cooking out all the nutrients, so don’t
Broccoli doesn’t really need too much added flavor. I normally just add a little salt and butter, and it’s good to go, but just to give it a little more flavor I added some pepper and garlic to the side. It really made a difference!
Adding the cast iron skillet on the grill also adds to the flavor. For one, you don’t lose any butter through the grill, so instead off falling through the grill (like if you were using a vegetable pan for the grill), it keeps the butter and it begins to brown which gives different flavor to the broccoli.
It would be pointless to put this on a grill on it’s own, so I recommend cooking this along side your main grilling dish so that smoke vapors will be created and be absorbed by the broccoli.
Trust me, this is going to be the only way you’re going to want to serve up broccoli. And Of course if it’s not grill season you can always just cook this on a stove top. It works all year around!
