Pub Style Irish Nachos

St. Patrick’s Day is around the corner, and if you’re not planning on cooking anything too crazy why not keep in the spirit and do some quick and easy Irish Nachos? You can keep these potatoes simple with with cheese, green onions and some sour cream to top it, or add some corned beef, bacon, avocado or anything else that you can think up! Maybe add some of my Spicy Pico De Gallo?

The kids will devour this if you don’t get to it first so be quick! This is also a great dish to serve when having some adult friends over with some pub style fish and chips, and a nice cold stout!

Pub Style Irish Nachos

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Servings: 4 Servinvgs
Sliced potatoes baked in the oven and topped with Cheddar Cheese and Green Onions. Great Pub style dish and perfect for St. Patricks Day!

Ingredients

  • 2 large russet potatoes
  • 4 oz cheddar cheese
  • 1 medium green onion

Instructions

  • Preheat your oven to 350 F.
  • Chop your potatoes length-wise in quarter inch slices
  • Toss the potato slices in a batch of ice cold water. Let them sit for about 10-15 minutes, this will make them less starchy and keep the color nice and white!
  • Drain and pat dry in a colander. Add a little salt and pepper to taste.
  • Lay the potatoes in a glass baking dish, baking pan, or cast iron skillet. Place in the center rack of your oven for 10-12 minutes
  • Remove from the oven, and top with cheese and green onions, and anything else you'd like to top them with!
  • After about 10 minutes the cheese will be nice and melted and potatoes cooked all the way through. Serve with sour cream and enjoy!
