Margarita Shrimp, meets avocado toast. And not any avocado toast, I’m putting my guacamole on top of grilled ciabatta bread, before adding grilled margarita shrimp on top. This recipe has summer written all over it!
My Margarita shrimp on grilled avocado toast recipe is the perfect, get your hands dirty and dig in type of recipe. No forks, or knives needed. What’s that? A shrimp fell off the toast? Better use your hands!
What I like about this recipe, is its all cooked on the grill. Any excuse to get out of the kitchen and be outdoors during the summer, I’ll take!
A quick tip, To get a good grill on your bread, you’ll want to slather it up with some melted butter. It’s will get it all nice and toasted and you’ll get some beautiful char marks on your bread.

Instructions
In a bowl add shrimp, with triple sec, tequila, smoked paprika, lime, kosher salt, and cayenne pepper. Let marinate in the fridge for about 15-20 minutes
For the Guacamole combine, chopped tomato, avocados, salt, garlic, serrano pepper and cilantro. Squeeze a little lime on top, and let set in the fridge.
Preheat your grill on high heat, and cook shrimp on one side, with butter bread on the other. Grill until shrimp is opaque and your bread has nice grill marks on them.
Top your toast with guacamole, and shrimp. Optionally, garnish with a little cilantro and cojita cheese. Enjoy!
