Grilled Shrimp Fajita Wraps

Grilled Shrimp Fajitas wraps are a no brainer when it comes to a quick week night meal. Grill some shrimp, peppers and onions, get a quick guac thrown together and throw it all in a tortilla wrap and you have dinner served my friend!

For the fajita seasoning, you can try the one I’ve made in my sheet pan shrimp fajitas, or use store bought fajita seasoning. The easier the better with this. That’s been my motto this week. We’re in the middle of a move and man getting dinner made has been a tough one!

Speaking of moving, there’s a little sentimental value to this recipe. This is the last recipe I shot in our apartment. Tomorrow is our big move and all equipment has been packed up. My blog started in this apartment and a lot has happened since moving in 4 years ago.

But we’re so excited to be moving into a larger home for our growing family, and I’m sure the wife will be SO excited not to have all my food photography stuff all over the place. I’ve got my office/studio and that’s where I’ll be confined to I’m sure!

Grilled Shrimp Fajita Wraps

Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 1 lb 21-25 jumbo shrimp
  • 2 tbsp fajita seasoning
  • 1 whole green bell pepper sliced
  • 1 whole yellow bell pepper sliced
  • 1/2 whole yellow onion sliced
  • 1 cup guacamole
  • 4 large flour tortillas
  • 6 ounces grated cheese

Instructions

  • Thaw and pat dry your shrimp. Slice bell peppers and onions and sprinkle fajita seasoning over both shrimp and vegetables. Place on the grill on medium high heat. Cook for about 7-10 minutes until shrimp is opaque.
  • spread a healthy amount of guacamole and cheese on a tortilla, then add shrimp and vegetables. Fold both sides of the tortilla in, then roll it up like a burrito. Place back on barbecue to grill the wrap closed.
  • Cut wraps in half, serve with some extra guacamole and salsa. Enjoy!!
