Soup season is upon us and I had to bring it in with a banger. This smoked chicken tortilla soup has a TON of flavor.

Smoked tomatoes, onion and jalepeno with shredded chicken makes this soup something that can be prepped over the weekend and heated up on a weeknight in under 20!

So to start I smoked my vegetables in the traeger. If you have time you could smoke chicken too (usually takes about 3-4 hours at 225), but I was a little worried that the smoke would overpower the soup.

The smokiness gives the soup the impression that your grandmother was in the kitchen all day slowly fire roasting tomatoes and its absolutely amazing.

Make sure to blend your vegetables to give you a smooth soup texture, unless you’re into the chunks, then by all means makes this a stew.

But with the chicken, homemade tortilla strips, cheese and avocado, you’ll have plenty to munch on.

The total cook time including smoking the vegetables was about two hours. But if you make the vegetables ahead, you could get his done in about 30.

Or feel free to used canned diced fire roasted tomatoes. It wont be as good, but it’ll do the trick!

Ingredients

  • 3 lbs tomatoes
  • 1/2 yellow onion
  • 1 jalapeno
  • 3 cloves garlic
  • 1 rotisserie chicken
  • 30 oz chicken broth
  • 30 oz water
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 tbsp chili powder
  • 1 tsp oregano
  • 2 bay leaves
  • 1/2 tbsp salt

GARNISHES

  • tortilla strips
  • avocado
  • cilantro
  • shredded cheese

Instructions

  • Set your smoker to 350. Cut tomatoes, jalapeno and onion in half and cook for about an hour.
  • Place smoked vegetables and 3 cloves of garlic in a blender with 1 cup of water and blend until smooth.
  • Pour blended tomato soup into a pot over medium heat along with remaining water and chicken broth.
  • Add in cumin, paprika, chili powder, oregano, salt and bay leaves
  • Shred rotisserie chicken and place into pot. bring to a bowl, then reduce to a simmer. Let cook for about 20-25 minutes.
  • Serve with garnishes and enjoy!

Notes

Optionally, cut about 10 corn tortillas into strips and fry in oil until golden brown for home make tortilla strips
If you want to make your own smoked chicken, rub about 1-2 tsp salt onto 4 chicken breasts. Smoke at 275 for about 3-4 hours until internal temperature hits 165F
