For this skillet cookie, I’m combining my favorite parts of summer, a fresh baked chocolate cookie, and adding a little something special, with my wife’s favorite candy bar loaded into it. Then topped with my favorite ice cream!

Then to top things of I’m using Dreyer’s Vanilla Ice Cream. I love how it just starts to melt and the cookie starts to absorb that rich and creamy vanilla ice cream.

It’s better than dipping your chocolate chip cookie in milk…

Yeah, I said it!

Now normally, a skillet cookie topped with a heaping serving of ice cream, is something that I’d reserve for dessert. But when it’s the last week of summer vacation, and your better half has been working the late shift 4 days in a row, you should treat the family to something fun for breakfast.

Yep, dessert for breakfast. Dad’s treat!

Chocolate Chunk Skillet Cookie with Vanilla Ice Cream

Servings: 4 people

Ingredients

  • 4 scoops Dreyer's Vanilla Ice Cream
  • 8 tbsp unsalted buttter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 whole egg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tbsp vanilla extract
  • 1 1/4 cup flour
  • 3/4 cup chocolate chips
  • 1/2 cup milk chocolate candy bar chopped

Instructions

  • Preheat oven to 375 F. Mix your softened butter, white sugar, and brown sugar in a mixing bowl.
  • Mix with a fork until it's evenly incorporated. Add the egg, baking soda, salt, and vanilla extract; mix until the egg is evenly incorporated, while making sure you're not mixing too vigorously.
  • Begin stirring in your flour, about 1/2 cup at a time. If it looks too "sticky" add flour at a table spoon at a time until your dough holds it's shape when you take a spoonful. Add in the chocolate chips!
  • line two small skillets with a t1/4 inch layer of dough. place in the oven for 15-20 minutes until center is just done. You're looking to keep this cooked, but not overly cooked so that they're nice and gooey.
  • Let cool for 5 minutes, top with Ice cream and enjoy!!
