Bacon, Egg and Cheese Totchos (tater tot nachos), is a fun way to have breakfast with the kids. It’s simple, nothing crazy that a picky eater wouldn’t eat, and like all nachos, you can easily expand upon it for the adults!

Breakfast was one of the first things I learned how to make as a kid. I remember learning how to make scrambled eggs at around 10 years old and being so proud of myself that I could make them.

They were a little over scrambled and mushy, but I’d figure out how to make them right one day!

Brayden started helping me out make scrambled eggs for breakfast as soon as he took interest in cooking with me. He loves watching the process, and I think it gets him more excited about eating as well.

I want to get him more open to different foods, whether it’s just how it’s cooked, or the way it looks. He’s VERY standoffish on food that doesn’t look friendly to him.

So I thought this Bacon Egg and Cheese Totcho recipe would be a perfect candidate for him to see how simple ingredients that he loves on their own, and put them all together.

For the eggs, I’m using Nellie’s Free Range Eggs, which are Certified Humane, and come from small family farms. We’re a big egg eating family, but I like knowing my eggs aren’t mass produced, and come from happy hens!

This bacon egg and cheese Totcho recipe can be made ahead of time. I cooked the bacon the night before, then Brayden and I laid out the tater tots, cheese and bacon, then stored in the fridge.

The next morning while the oven was preheating, we cracked some eggs over the Totchos, then set it in the oven. By the time Brayden was ready for school, a hearty breakfast was waiting for everyone to dig into.

Beats oatmeal or cold cereal any school morning!!
