Sweet potatoes isn’t something I’d normally think of on huevoes rancheros but when doesn’t potatoes taste good with eggs?

Plus you get those complex carbs with a sweet potato, so that makes this 100% healthy.. right?!

Huevos Rancheros Tostadas with some seasoned sweet potatoes on top makes the perfect breakfast, or breakfast for dinner recipe!

The sweet potatoes are seasoned with a little cumin, paprikia ,salt and garlic. On top of some black refried beans avocado, cherry tomatoes and a touch of cilantro and queso fresca, all thats left is to add a fried egg to it.

Sweet Potato Huevos Rancheros Tostada

Ingredients

  • 1 large sweet potato peeled and diced.
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 4 to stada shells
  • 4 eggs
  • 16 oz black refried beans
  • 1/4 cup queso fresca
  • 1/4 cup cilantro chopped
  • 1 cup cherry tomatoes halved
  • 1/2 avocado

Instructions

  • skillet over medium heat for about 10 minutes until tender and browned ; set aside
  • While the potatoes are cooking heat up a can of refried black beans in a small pan on medium low.
  • Fry 4 eggs and place on a plate.
  • Top black refried beans on tostada, Top with a spoonful of sweet potatoes, cherry tomatoes, avocado, queso fresca and cilantro . Top with fried egg and your favorite salsa and enjoy!
